Garlic Chicken & Fresh Herbs

A simple and savory chicken dish infused with fresh herbs and golden garlic — perfect for any night of the week.


Serves

Ingredients

  • 6 boneless, skinless chicken thighs or breasts (about 1½ lbs)
  • 1 cup chicken stock
  • 2 Tbsp brandy (optional)
  • 1 Tbsp extra virgin olive oil
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 10 cloves garlic, peeled and halved
  • 1 tsp minced fresh rosemary, crushed
  • ½ tsp minced fresh thyme
  • 1 Tbsp minced fresh chives

Instructions

  1. Season the Chicken
    Pat chicken dry and sprinkle both sides with salt and pepper.
  2. Brown the Chicken
    In a large skillet, heat olive oil over medium-high heat. Add chicken and brown on both sides. Remove chicken from the skillet and set aside.
  3. Deglaze with Garlic & Brandy
    Remove skillet from heat. Add halved garlic cloves and brandy. Return to heat and stir continuously over medium heat for 1–2 minutes, until most of the liquid has evaporated.
  4. Simmer with Stock & Herbs
    Stir in chicken stock, rosemary, and thyme. Return chicken to the skillet. Bring to a boil, then reduce heat and simmer, uncovered, for 6–8 minutes or until the internal temperature of the chicken reaches 170°F.
  5. Finish with Fresh Chives
    Sprinkle with fresh chives before serving.

  • Serve with crusty bread to soak up the flavorful garlic-herb sauce.
