Garlic Chicken & Fresh Herbs

A simple and savory chicken dish infused with fresh herbs and golden garlic — perfect for any night of the week.

Ingredients
- 6 boneless, skinless chicken thighs or breasts (about 1½ lbs)
- 1 cup chicken stock
- 2 Tbsp brandy (optional)
- 1 Tbsp extra virgin olive oil
- ½ tsp kosher salt
- ¼ tsp black pepper
- 10 cloves garlic, peeled and halved
- 1 tsp minced fresh rosemary, crushed
- ½ tsp minced fresh thyme
- 1 Tbsp minced fresh chives
Instructions

Season the Chicken
Pat chicken dry and sprinkle both sides with salt and pepper. -
Brown the Chicken
In a large skillet, heat olive oil over medium-high heat. Add chicken and brown on both sides. Remove chicken from the skillet and set aside. -
Deglaze with Garlic & Brandy
Remove skillet from heat. Add halved garlic cloves and brandy. Return to heat and stir continuously over medium heat for 1–2 minutes, until most of the liquid has evaporated. -
Simmer with Stock & Herbs
Stir in chicken stock, rosemary, and thyme. Return chicken to the skillet. Bring to a boil, then reduce heat and simmer, uncovered, for 6–8 minutes or until the internal temperature of the chicken reaches 170°F. -
Finish with Fresh Chives
Sprinkle with fresh chives before serving.
