Roasted Beets with Goat Cheese & Rainbow Sprinkle Microgreens

A beautiful, earthy dish showcasing vibrant roasted beets, creamy goat cheese, and the colorful crunch of Hardee Greens’ Rainbow Sprinkle Microgreens. Serve warm or cold — perfect as a side dish or salad.

Ingredients

  • 3–4 medium beets, trimmed, peeled, and chopped into chunks
  • 1–2 Tbsp olive oil
  • Salt & freshly ground black pepper, to taste
  • 1 tsp fresh thyme leaves
  • 1–2 Tbsp balsamic vinegar
  • ⅓ cup crumbled goat cheese (adjust to preference)
  • 1 cup Hardee Greens Rainbow Sprinkle Microgreens

Instructions

  1. Prep the Oven & Beets
    • Preheat oven to 400°F.
    • Trim, peel, and cut beets into medium-sized chunks.
  2. Season & Roast
    • In a mixing bowl, toss the beets with olive oil, salt, pepper, and thyme.
    • Spread beets on a parchment-lined baking sheet.
    • Roast for 35–40 minutes, turning once or twice with a spatula, until tender and caramelized.
  3. Finish & Serve
    • While still warm, toss roasted beets with a drizzle of balsamic vinegar.
    • Sprinkle crumbled goat cheese over the top.
    • Finish with a generous topping of Hardee Greens Rainbow Sprinkle Microgreens.

Tips

  • For added crunch, consider topping with toasted walnuts or pepitas.
  • Delicious served chilled over arugula or mixed greens.
