Roasted Beets with Goat Cheese & Rainbow Sprinkle Microgreens

A beautiful, earthy dish showcasing vibrant roasted beets, creamy goat cheese, and the colorful crunch of Hardee Greens’ Rainbow Sprinkle Microgreens. Serve warm or cold — perfect as a side dish or salad.

Ingredients
- 3–4 medium beets, trimmed, peeled, and chopped into chunks
- 1–2 Tbsp olive oil
- Salt & freshly ground black pepper, to taste
- 1 tsp fresh thyme leaves
- 1–2 Tbsp balsamic vinegar
- ⅓ cup crumbled goat cheese (adjust to preference)
- 1 cup Hardee Greens Rainbow Sprinkle Microgreens
Instructions
- Prep the Oven & Beets
- Preheat oven to 400°F.
- Trim, peel, and cut beets into medium-sized chunks.
- Season & Roast
- In a mixing bowl, toss the beets with olive oil, salt, pepper, and thyme.
- Spread beets on a parchment-lined baking sheet.
- Roast for 35–40 minutes, turning once or twice with a spatula, until tender and caramelized.
- Finish & Serve
- While still warm, toss roasted beets with a drizzle of balsamic vinegar.
- Sprinkle crumbled goat cheese over the top.
- Finish with a generous topping of Hardee Greens Rainbow Sprinkle Microgreens.
Tips
- For added crunch, consider topping with toasted walnuts or pepitas.
- Delicious served chilled over arugula or mixed greens.
