Hardee Greens Herbed Quinoa, Brown Rice, Chickpea & Roasted Veggie Salad
with Lemon-Tahini Dressing

A hearty, protein-rich salad that’s loaded with flavor and freshness. Roasted veggies, seasoned grains, chickpeas, feta, and Hardee Greens microgreens come together in a zesty lemon-tahini dressing. Perfect as a healthy side or satisfying main.
Ingredients
For the Salad:
- 1 package Simple Truth Organic Brown Rice & Quinoa (garlic flavor)
- 1 package Simple Truth Organic Brown Rice with Ancient Grains (black pepper flavor)
- 1 can (15 oz) chickpeas, rinsed and drained
- ¼ cup Cassandra’s Kitchen Olive Oil
- 2–3 cloves garlic, minced
- Maldon sea salt and black pepper, to taste
- 3 cups roasted mixed vegetables (eggplant, zucchini, yellow squash, etc.), chunky diced
- 1+ cup fresh Hardee Greens microgreens (broccoli, purple kale, arugula, or any mix)
- ⅔ cup chopped green onions
- ⅔ cup crumbled feta cheese
For the Lemon-Tahini Dressing:
- ½ cup olive oil
- 6–8 Tbsp lemon juice, to taste
- 4 Tbsp tahini
- 2 large garlic cloves, pressed or minced
- 1 tsp Maldon sea salt
- Freshly ground black pepper, to taste
Instructions

Preheat the Oven
Heat oven to 450°F. -
Prepare Grains
Cook the brown rice & quinoa and the brown rice & ancient grains according to package instructions. Fluff and set aside. -
Roast the Veggies
Toss diced vegetables with olive oil, garlic, salt, and pepper. Spread on a foil-lined baking sheet and roast for about 15 minutes, or until al dente and lightly golden. -
Make the Dressing
In a small bowl, whisk together olive oil, 3 tablespoons of lemon juice, tahini, garlic, sea salt, and black pepper. Taste and adjust with more lemon juice or pepper as desired. -
Assemble the Salad
In a large bowl, combine the fluffed grains, chickpeas, roasted veggies, Hardee Greens microgreens, green onions, and crumbled feta. Drizzle with the lemon-tahini dressing and toss gently to combine. -
Serve or Store
Serve warm or at room temperature. This salad keeps well refrigerated for up to 3 days — perfect for meal prep or make-ahead gatherings.
